Microbiological Quality of Chicken Carcasses at Modern Poultry Plant | Author : Fahim Shaltout | Abstract | Full Text | Abstract :A total number of one hundred chickens at modern poultry plant were examined for microbiological evaluation, the mean values of Aerobic Plate Count /cm2 chicken at arrival to the plant; slaughtering, giblets, packaging, and receiving for saling were 2.4x106, 1.5x106, 5.7x105, 4.9x104, and 3.8x104 CFU/cm2, respectively. the mean values of total coliform count/ cm2 chicken at arrival to the plant , slaughtering , giblets, packaging , and receiving for saling were 1.1 x105, 8.9 x104, 6.1 x104, 2.4 x103,and 2.5 x103 CFU/cm2 , respectively and the total E.coli count/cm2 chicken at arrival to the plant , slaughtering , giblets, packaging , and receiving for saling were 1.2 x104, 9.1 x103, 9.0 x102, 2.1 x102,and 2.0 x102 CFU /cm2 , respectively. The mean values of total Streptococcal count /cm2 of chicken at arrival to the plant , slaughtering , giblets, packaging , and receiving for saling were 1.2 x102, 5.1x102, 1.2x102, -,and - CFU/cm2, respectively and total Staphylococcal counts were 8.1 x102, 2.1 x102, 2.0 x102, 4.-,and – CFU/cm2 , respectively. Salmonella spp., Clostridium perfringens and fungi could not be detected in the examined samples. The public health significance of the isolated bacteria was discussed |

What are the different definitions of the distance/s between the migrant and his home country and the host culture? What role does the migrant play in the spreading of these eating habits? How does the acculturation process work? What different forms of territorial anchoring account the spreading of these genuine country-specific foods? |
| Clonorchiasis: An emerging foodborne disease of public health concern | Author : Mahendra Pal | Abstract | Full Text | Abstract :Foodborne diseases caused by multiple etiologic agents are prevalent worldwide affecting both sexes and all age groups. Clonorchiasis is considered as an emerging major foodborne disease of public health problem as about 35 million people are infected globally. It is a foodborne helminthic zoonosis of a greater socioeconomic importance in several countries of Asia. The disease is caused by Clonorchis sinensis, which is a trematode. The infection occurs by the consumption of raw or inadequately cooked fish contaminated with metacercaria of the parasite. The clinical spectrum of disease in humans depends on the burden of parasites. In severe infections, jaundice, cholangitis, ascites, cholecystitis, formation of gall stone, and gastrointestinal bleeding are observed. Maximum cases are observed in males than females, and infection is serious in elderly persons. The diagnosis of disease can be confirmed by parasitological technique. Presently, praziquantel is the drug of choice as it has shown high cure rates in endemic areas. The education campaigns regarding the consumption of properly cooked fish and avoidance of faecal matter to ponds as a fish food are practical strategies that may help to control the disease. |
| Relative Amounts of Eicosanoid and Docosanoid Precursor Fatty Acids Are Positively Associated: A Distribution Dependent Regulation | Author : Arne Torbjørn Høstmark | Abstract | Full Text | Abstract :We recently reported a positive association between %EPA (20:5 n3) and %AA (20:4 n6) in muscle lipids of chickens. In the present work we investigate whether relative amounts of other fatty acids, which are precursors of eicosanoids and docosanoids, might also be positively correlated. The present results seem to verify this suggestion. Furthermore, the correlation outcome might be explained by the particular concentration distributions of the fatty acids under investigation. Thus, similar results were obtained using true values and substitute, random numbers for the fatty acids, sampled with the true ranges. Additionally, when we hypothetically altered distributions in computer experiments, we observed appreciable changes in the strength of the associations. Thus, there seems to be Distribution dependent positive associations between eicosanoid and docosanoid fatty acid precursor percentages, possibly serving to ensure that effects of important regulatory molecules in physiology will be balanced. We suggest that Distribution Dependent Correlations could be a novel evolutionary regulatory principle. |

Unfortunately, whilst these foods contain lots of calories, they often have far lower levels of fiber, water and minerals as compared to natural foods. Packaged food and snacks are also created specifically so that we get enough texture and taste from each bite to tantalize our taste buds; but not enough to make us feel full. Its evident that fast food feels good to eat and tempts us in many different situations. Fast food first popularized in the 1970s in the United States, which has today the largest fast food industry in the world. As taste, time considerations, convenience, and cost are major factors that contribute to an adolescents or young adults food choices, fast food restaurants serve as popular sites for their meals eaten outside the home. Current approaches suggest that fast food restaurants should be required to clarify nutrition information such as energy and fat content on their menu boards and on product packaging. This is important to help the consumer to make better food choices before purchasing. An adequate, nutritious, and balanced diet is essential to maintain health for once lifetime. To achieve this healthy diet, fast food consumption should be limited. |
